Ingredients
200g frozen peas
Olive Oil
1/4 of a lemon
1 tablespoon of tahini
a handful of mint
salt and pepper
half a shallot
Method
Pan fry half a chopped shallot in olive oil
Add 200g Frozen Peas
Once cooked, add in a hand full of mint and stir for 1 minute
Put everything into a blender with 1 tablespoon of tahini, a glug of olive oil and a squeeze of lemon
Blend until a thick paste
Salt and pepper to taste
It's delicious hot or cold!
We like it with a slice of New Italian bread
Definately going to make this today to have with my own freshly made Irish Wheaten Soda Bread… Yum..!!
